1 log soft goat cheese, chilled
1 tbsp. fine dry bread crumbs
1 tbsp. olive oil
12 oz. mixed mushrooms, sliced
3 cloves garlic, minced
3 tbsp. white wine vinegar
1/4 tsp. paprika
1.5 lb. asparagus
3 tbsp. butter
1/2 sweet red pepper diced
1/3 cup water
2 tsp. fresh tarragon or thyme, minced

Slice goat cheese into 8 equal rounds. in small dish, coat each side of rounds.
Mix bread crumbs with paprika. Place cheese on baking sheet. Arrange asparagus on rimmed baking sheet. Drizzle with oil and toss to coat. Roast in 475° oven for 7-10 minutes. Remove from oven and keep warm. Place goat cheese in oven and bake until hot, 3-4 minutes. Meanwhile, heat butter in large pan, add mushrooms, red pepper and garlic. Cook, stirring until mushrooms are lightly browned, 4-5 minutes. Remove from heat, stir in water, vinegar and tarragon. Arrange asparagus on warm salad plates; spoon mushroom mixture over and top each serving with 2 rounds of goat cheese. Garnish with fresh herbs if desired.
