1 large spaghetti squash
1 pound of ground turkey sausage
1 pound of mild sausage
1/2 cup diced onion
1 cup coarsely chopped spinach leaves
1/2 cup diced red bell pepper
1 cup pizza sauce
1/4 cup unsweetened applesauce
1 tsp dried basil
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp found black pepper
3 eggs, beaten

1. Preheat oven to 400 degrees

2. Place squash in preheated oven until cooked through, about 25 minutes. When cook enough to hand, scoop out the strands of squash with a spoon and place in an 8 inch square baking dish.
*You can also place squash in crock pot. Put about 1/2 to 1 cup of water in crockpot, place whole squash in crockpot and cook for about 4 hours. Let cool then scoop out strands

3. After squash cooked, reduce oven to 350 degrees

4. Cook sausage and onion in large skillet over medium high heat until browned, 4-6 minutes. REMOVE from heat.

5. Stir pizza sauce, spinach, red pepper, applesauce, basil, garlic powder, oregano, pepper into turkey mixture.

6. Spread mixture over squash in baking dish.

7. Poor eggs over sausage mixture and toss egg, sausage mixture and squash together until egg is just combined.

8. Bake in preheated oven until mixture is bubbling and eggs are set, about ONE HOUR.
