6 medium size zucchini
1 pkg dry spaghetti mix
8 oz Parmesan mix
8 oz mozzarella cheese
1 can tomato sauce
Croutons: Dry bread in oven. Cut into squares and brown in melted margarine. Return to oven and bake for a few minutes.

Cut zucchini in fourths lengthwise. Boil for 5 minutes. Place in bottom of 9 by 13 glass baking dish. Prepare spaghetti nix according to package directions. Layer mozzarella on top of zucchini, then layer spaghetti sauce on top. Top with homemade croutons and Parmesan cheese. Bake at 375 degrees for 20 - 30 minutes.
