1 lb. medium or long grain rice
1 15 oz. can gandules (pigeon peas) - drained
¼ cup of salted bacon
¼ cup of chopped ham
2 1/2 tbsp. sofrito (make your own by dicing onion, garlic, green pepper, cubanel and cilantro together)
2 envelopes sazón seasoning with achiote
2 tbsp. Manzanilla olives
1 1/2 tsp. capers
1/2 cup vegetable oil
1 8 oz. can tomato sauce
16 oz. water

(1) Start by placing and heating the vegetable oil in pot on medium high heat.

(2) When the oil is hot add the bacon. When the bacon is cooked but not crisp add the ham. Once it’s browned add the sofrito. This must stir fry all together for about 1 minute.

(3) Once that has been done add the sazón with achiote, gandules, olives, capers, onion soup and tomato sauce in the pot.

(4) Thoroughly wash rice and add to the other ingredients.

(5) Pour water over the ingredients and stir well.

(6) Boil on medium high until all the water is absorbed.

(7) Reduce heat to medium low and cover the pot with aluminum foil* and lid.

(8) Cook for 35-40 minutes, stirring occasionally every 10 minutes until the rice is tender.

Use salt and pepper (to taste) for seasoning.

Placing aluminum foil over the pot of rice. It gives the grains a chance to all pop evenly.

Serve with maduros or tostones and enjoy!
