10 eggs
1 large ripe avocado
1/4 sweet onion(more or less)
1/8 green pepper(more or less)
1/8 red pepper(more or less, just for colour)
coriander (optional)
1/4 lime
1/4 cup Mayonnaise
Japanese wasabe
Coarse salt and freshly ground pepper

Directions:

1. Hard boil eggs and peel them, cut in half, lengthwise. Carefully scoop out yolks, and arrange whites on a platter or tray.
2. Cut the avocado length wise from the top all the way around the bottom and back up. Pop open. Remove the stone. With a spoon scoop out all the bright green flesh into a bowl
3. Chop onion, green pepper and red pepper and put them on the top of avocado;
4.Add a couple of egg yolks into the bowl
5. Add wasabe, salt and ground pepper into the bowl, squeeze lime and use a spoon to mash and stir all the ingredients together;
6.Spoon the avocado/egg mixture into the cavities of the egg whites.
if you want to add a handful of chopped fresh cilantroto, put them at the very end on the top of the mixture.

It is easy and simple but delicious. The wasabe reduces the creamy taste of advocado and make this a perfect appetizer.
