Ingredients: 2 cups basmati rice (wash and soak in a little water for 15 min and then drain) 1 cup mixed vegetables (frozen peas, diced fresh carrots and beans - editor note: please if possible use fresh and local Ontario - dice and freeze for the winter) 1 onion finely sliced 3 tbsp. canola oil Spice mix: 3 cloves, 1 bit cinnamon, 4 peppercorns and 3 cardamom. A pinch of turmeric. Salt to taste.

Directions:1. In a skillet heat half the oil. First lightly sauté the vegetables for 5 minutes; remove and keep aside. 2. Then in the same skillet add rest of the oil and sauté the spice mix for a couple of minutes; then add the sliced onion and fry till lightly golden. Then add the drained rice and stir till grains look opaque. 3. Add 3 1/2 cups of hot water, the sautéed vegetables, a pinch of turmeric powder for color (optional) and the salt. If you have a rice cooker, turn the rice into the cooker and let it cook. When done, fluff with a fork.
If you do not have a rice cooker, follow step ** below
**Let the rice bubble on a medium flame. After about 5 minutes, reduce to minimum heat, tightly close lid and leave for about 10 minutes. Turn off the heat and leave for 5 more minutes.
If you prefer non-vegetarian fare, you can add any of the following: cooked shrimp or chicken or pork or even sliced sausage to this dish when you are frying the vegetables. |
