1 lb. carrots, peeled and diced
1/2 c. butter
1 t. vanilla
3 eggs
3 T. flour
1 t. baking powder
1/2 t. salt
3/4 c. sugar

Directions:
Directions:
Boil or steam carrots until soft. Blend cooked carrots in a food processor. Add remaining ingredients and blend. Pour into greased casserole dish. Bake at 350 for 45 min. Sprinkle with powdered sugar.
