8-10 medium sized baking potatoes, peeled & boiled til tender
1 c sour cream
1 8oz package cream cheese, softened
4 T butter
1/3 c chopped chives(optional)
salt & pepper to taste
1/2 c Parmesan cheese

Directions:
Directions:
1. Beat the sour cream & cream cheese together
2. Add the hot drained potatoes, beat until smooth.
3. Add the butter, chives, salt & pepper. Dot with butter and sprinkle with cheese.
4. Refrigerate for up to 2-3 days. When ready to serve, bake at 350 degrees for 25 minutes, until golden.
