2 lb. waxy-fleshed new potatoes
2 tbsp. extra-virgin olive oil
30-40 fresh sage leaves
1 tsp. coarse sea salt

Directions:
Directions:
Preheat oven to 425º
Scrub and dry potatoes.
Pour the oil into a cast iron frying pan, spread evenly.
Lay the sage leaves flat on the oiled surface, completely cover the bottom of the pan.
Sprinkle salt over the sage.
Cut small potatoes in half or larger ones in quarters.
Arrange cut side down on sage.
Bake uncovered until the potatoes are tender and the cut sides are crusty brown, about 35 min.

Sage grows into large bushes in Texas with a beautiful purple flower. We all enjoyed this simple dish with the crispy, deep fried feeling of the sage leaves.
