1 lb. fresh spinach
2 tbsp. butter
1 medium onion, diced small
Salt
1/3 c. heavy cream
grating of nutmeg
freshly ground pepper

Directions:
Directions:
Melt butter in pan over medium heat.
Add onion, cook until soft, about 7 mins.
Add spinach and cook until wilted.
Add salt and 1/3 c. heavy cream.
A few grates of nutmeg.
Boil until cream has reduced and is thick.
Add pepper, adjust seasonings.
