Baked butternut or acorn squash (can use frozen, reheated)
Brown sugar
Butter
Salt and pepper
Orange juice
Oranges, halved, with flesh scooped out

Directions:
Directions:
Scoop hot squash out of its shell, removing seeds, and beat with a mixer, adding brown sugar, orange juice, butter, salt, and pepper to taste. Reheat if necessary, keeping hot until ready to serve.
Just before eating, mound the hot quash mixture into orange halves, one for each guest, served on little side plates.

Polly got this recipe from Jean Robinson, a tennis friend during her Alma days. Jean, Polly, Dare White and other ladies would meet at the club in Winona, play some fierce doubles, and sometimes have one another over for lunch. Polly has always loved this recipe, a unique way of using up that ample harvest of squash that grew in her garden.
