1 lb.Tilapia fillets
non-stick cooking spray
salt and ground black pepper

Topping:
1/2 c. mayo
2 tsp. course ground mustard
Lemon juice, to taste
1/2 tsp. dried tarragon leaves (more if you use fresh)
1 tbsp. dry bread crumbs

Directions:
Directions:
Heat oven to 450º
Spray large baking pan with non-stick cooking spray.
Lay fish in baking pan. Season both sides lightly with salt and pepper.
For topping, combine mayo, mustard, lemon juice and tarragon in a small bowl. Spread over tops of fillets. Sprinkle with dry breadcrumbs.
Bake fish 6-10 minutes, or until fish turns translucent to opaque and just begins to flake with fork.
Rule of thumb - cook fish 10 minutes per inch of thickness.
Remove from oven and serve immediately.
