8 c. fresh bread cubes
1/2 c. celery, chopped
1/2 c. onion, chopped
2 tbsp. butter
1 c. freshly squeezed orange juice
2 tbsp. coarsely shredded orange peel
1 c. chopped parsley
1/2 t. thyme leaves
1/2 t. ground sage
1 1/2 t. each, salt and pepper

Allow bread cubes to dry out for about an hour.
Saute onion and celery in butter, then add to bread cubes. Stir in remaining ingredients very gently so that the bread cubes don't get crushed.

If you're making T's Christmas goose, use this recipe to stuff one of the geese, and be sure to also make Cumberland Sauce (in Basic Recipes and Sauces) which complements it beautifully.
