1 lb Scallops
2 C white wine
1/2 lb mushrooms, sliced
6 oz onion, chopped finely
1 1/2 T lemon juice
1/4 C water
2 T butter
2 T flour
2/3 C heavy cream 35%
gruyere cheese, grated
salt & pepper
pinch of cayene

Directions:
Directions:
simmer scallops in wine and onion for 5 minutes, drain and reserve liquid.
Cook mushrooms in lemon and water for 10 minutes, drain and reserve liquid.
Melt butter, add flour, slowly add liquids and cookk until smooth.
Slowly add cream, mushrooms and seasoning.
Place on scallop shells or oven-proof dishes, top with grated gruyere cheese
Place under broiler until heated through and browned.
