1/2 lb scallops, drained and chopped
2 green onion, finely chopped
1/2 C Cheddar, shredded
1/4 C flour
1 egg, beaten

3/4 C flour
1/2 C dry breadcrumbs
2 T olive oil
2 T butter

Directions:
Directions:
Combine scallops, green onion and cheese.
Sprinkle with flour and add 1 beaten egg, salt and pepper to taste.
Form into 8 cakes and coat each cake with flour, dip into second beaten egg and then breadcrumbs
Heat oil and butter in large skillet over medium heat, cook cakes for about 2 minutes per side, until golden.
Great served with a light green salad
