Glaze:
1/2 C maple syrup
1/2 C dark rum
1/4 C unsalted butter

Prawns:
6 - 8 jumbo shrimp, peeled, de-veined, butterflied
1/4 C goat Cheese
2 T sour Cream (Plain Yogurt)
2 T fresh chives, chopped
Lemon or lime juice to taste
Black pepper to taste
6 slices prosciutto (thin)

For Glaze:
Add maple syrup, rum and butter to saucepan over medium heat. Reduce until sauce coats the back of a spoon. Set aside.
Prawns:
Cream goat cheese and sour cream together.
Stir in chives and pepper
Chill to firm up and set
Using a small knife spread cheese mixture onto the inside of shrimp and close shrimp.
Wrap proscuitto firmly around shrimp, do not let mixture squeeze out.
Heat grill to medium high
Dip shrimp in glaze and grill for 3 - 3 1/2 minutes per side, brushing with glaze until cooked.
