Yields: 6-8 servings
3 pounds lamb, cubed
flour
carrots
onions
potatoes
cooked peas
water
garlic
tomato paste
sugar
sherry

Directions:
Directions:
Coat lamb with flour and brown in oil in batches. Add water, garlic and tomato paste to the last batch. Bring to a boil and put into a casserole. Cover and bake at 350° for 30 minutes. Heat a teaspoon of oil in the skillet, scrapping up brown bits from the meat and add all the veggies, except the peas, and sugar to glaze. Add the veggies to the casserole and continue baking for at least 1 hour. Before serving stir in the peas and sherry to taste.
