2 T. butter
1 lb. beef sirloin tip steak, diced
1 can re-fried beans
1 1/2 c. cheddar cheese
3 medium green onions, thinly sliced
1 c. Mexican cheese blend
1 pkg. fajita seasoning
8 small flour tortillas
1 c. Velveeta
1 can of Rotel

Directions:

1. Heat oven to 400 ºF.

2. In a 10-inch skillet, melt butter. Stir in beef; sprinkle with seasoning mix. Cook 10 to 12 minutes until done; drain.

3. Heat re-fried breans and spread over toritllas within 1/4 in. of edges. Top with beef, cheese and onions. Roll and place seams down in 13x9 in glass pan, ungreased.

4. Pour Rotel queso on top of enchiladas and sprinkle with Mexican cheese blend.

5. Bake 15 to 20 minutes until all cheese is melted.
