2 large onions, chopped
3 T. butter
2 T. all-purpose flour
2 c. water, divided
4 c. chicken broth
2 medium potatoes, peeled and diced
1 1/2 c. mashed potato flakes
3/4 tsp. pepper
1/2 tsp. salt
1/2 tsp. dried basil
1/8 tsp. dried thyme
1 c. half-and-half cream
1/2 c. grated cheddar cheese
2 green onions, sliced
bacon bits (optional)

Directions:

1. In a large skillet, saute onions in butter until tender. Stir in flour. Gradually stir in 1 c. water. Bring to a boil; cook and stir for 2 min. or until thickened. Transfer to a 5-qt. slow cooker.

2. Add the broth, potatoes, potato flakes, pepper, salt, basil, thyme and remaining water. Cover and cook on low for 6 - 8 hours or until potatoes are tender. Stir in cream; heat through. Garnish with cheese, green onions, and bacon bits.
