1 lb sea scallops
1/2 cup carmelized onions
1/2 julienne sundried tomatoes
3 bunches of fresh spinach, chopped
3 oz balsamic vinegarette, I like Newman's
oil for searing

garnish, grilled tomatoes

Directions:
Hot pan!
Season and sear scallops until crisp and golden on both sides. Reserve scallops, cover with foil, remember not to over cook. Deglaze with vinegarette. Toss spinach into pan, saute just until slightly wilted. Spinach onto platter, top with your scallops and garnish with grilled tomatoes and carmelized onions.
