3 cloves of garlic, chopped
1 medium onion, diced
1 medium zucchini, grated
3 cans stewed tomatoes, pureed
1 can diced tomatoes
1/2 stick butter
1 tsp Oregano
2 tsp Basil
Black pepper to your taste
your favorite pasta

Directions:
Directions:
In sauce pot, add butter, zucchini,onion, garlic and spices. Cook until onion is translucent. Mmm, it's a beautiful fragrance... Add pureed stewed tomatoes and diced tomatoes. Simmer for 5 minutes, or until sauce is thoroughly heated. Serve on your favorite pasta, and freshly grated cheese. (Any other fresh vegetables; mushrooms, grated carrot may be added.) Another easy recipe to reduce those zucchini that just keep coming. Cans well.
