10 large russet potatoes fully baked
1 pint sour cream
10 slices of bacon cooked till crispy and diced
1 stick butter
1 cup milk
1 bag grated sharp cheddar cheese
1/2 cup chopped parsley
1/2 cup chopped chives
salt and pepper to taste

Directions:
Take the baked potatoes and cut lengthwise and clean out inside, leaving in big chunks as much as possible. If you like skins, leave them on and just cut the whole potato into inch sized chunks.
Put them in a large oblong baking dish. Put the milk, cheese, sour cream and bacon over the potatoes, dice the butter and sprinkle on top, sprinkle with the herbs, salt and pepper. Bake at 350 1 hour Cover with foil first 45 min then remove foil for 15 min. to crisp up.

This can be made without the bacon if you are a veggie. This dish takes a while and is not figure friendly but who cares, it is so good. It is always the first dish empty at a potluck. The boys like to put hot sauce or salsa on it. This can be made in the am or night before and stuck in the oven an hour before dinner.You can also use whatever cheese you prefer.
