moose roast (3-4 lbs
1 tbsp olive oil
3 slices pancetta or bacon
1 med onion, diced
2 cloves garlic, diced
1 lg carrot, chopped
1 stalk celery, chopped
1 tsp tomato paste
fresh thyme or 1 tsp dried thyme
2 tbsp butter
2 tbsp flour
1 cup beef broth
1 cup white wine
1 cup chopped mushrooms

Season roast with salt and pepper. Saute oil and bacon on med heat in large skillet. remove bacon and set aside. Sear roast (in oil and bacon fat). on both sides until lightly browned (2-3 min). Remove roast. Saute onion, carrot, and celery in skillet for 3-4 min. Add garlic and continue to saute for 1 minute. Return bacon to skillet. Add butter and stir until melted. Gradually add flour until smooth. Stir in wine, broth and tomato paste, and continue stirring until thickened. Add roast, cover with aluminum foil, then lid on top to ensure a good seal. Slow cook in oven at 300 degrees for 2 hours. Remove and let set for 10-15 minutes on cutting board. Slice and return to sauce.

Serve with mashed potatoes, and sauteed turnip and parsnip strips and green beans. May also add a pastry
