Lots of long green or red peppers
salt

Clean and sort peppers. Sort peppers in piles of long straight or bent. With needle and thread, hang long straight peppers by the stems (about 15 peppers per line) Dry in the sun. (couple months) After dried, keep on the thread or store in plastic Nonna container (deseeded and destemed) (like Aunt Rita does) When ready to prepare, take deseeded and destemed peppers, add salt and pepper and pour just before boiling vegetable oil
over the dried peppers to crisp them up. Store peppers with oil in container in refrigerator.

For bent, or cut peppers, deseed, destem and cut to desired size put them in a Pyrex dish, sprinkle salt and garlic with vegetable oil and bake in over for about 30 minutes. Cool and store in small plastic containers. My Dad also likes these de-skinned at this time. Good to freeze.

Peppers are a family favorite. Really can not get enough of them.
Joe the gardener use to bring my Mom bushels of them, sometimes, already strung.
My Dad likes to also put them through a coffee grinder and make homemade pepper flakes.
