1 lb penne pasta
1/4 c. extra virgin olive oil
2 shallots
4 cloves garlic
1/2 c. vodka
1- 28 oz can diced or crushed tomatoes
1- 16 oz pkg. cream cheese
salt and pepper
1 lb peeled, cleaned shrimp

Directions:
Directions:
Saute minced shallots and garlic in olive oil a few min. till tender. Add vodka and reduce a few min. Add tomatoes and salt and pepper to taste. Bring to boil then add cream cheese. Reduce heat and simmer about an hour. Stir in cleaned shrimp and cook till shrimp are done. Serve over cooked penne pasta.
