4 large zucchini sliced in 1/4" slices
1/2 cup olive oil
3 cloves of garlic sliced
Salt
1 lb Linguini Fini (or any long, thin pasta)

Directions:
Heat olive oil in large skillet (frying pan). Layer in zucchini in batches and brown lightly on both sides along with a few slices of garlic each time. Be sure to cook garlic to golden brown but do not burn! Put zucchini in a bowl as it comes out of the frying pan; add salt to taste. Save all of the extra oil from the frying pan.

Cook pasta al dente in large pot of salted water. Rather than draining pasta in a colander, lift it out of boiling pot with a pasta spoon - this brings some water with it to add to the sauce. Toss with the olive oil from the frying pan.

Add the zucchini with the oil and garlic to the pasta and toss. If making double recipe then may want to serve pasta and top it with zucchini rather than tossing.

Serve with grated Romano cheese.

Comments: Can also use kale, cauliflower, broccoli, etc. steamed with olive oil, garlic and a little water, rather than fried.
