Ingredients: 2 1lb pork fillets
Marinade: 2 in fresh ginger root, peeled 1 large garlic clove, crushed 2 tbsp Hoisin Sauce 2 tbsp dark soy sauce 2 tsp light soft brown sugar 1 tsp five spice powder 2 tbsp sunflower oil 2 tbsp honey
To Serve: 1/2 cucumber 6 spring onions 1 lg lettuce broken into leaves 12 tsp Chinese plum sauce

Directions:Trim fat from the pork fillets. Finely grate ginger and squeeze out the juice into a shallow non metallic dish. Stir in the rest of the marinade ingredients. Add the pork fillets and turn them over in the mixture until well coated. Cover and set aside for at least 2 hours. Cut the cucumber in half lengthways and scoop out the seeds. Cut into thin strips about 3 in long. Half the spring onions and cut lengthways into very thin shreds. Arrange on a serving plate in separate piles along with the lettuce leaves and a small bowl of the plum sauce. BBQ the pork fillets over medium hot for about 20 minutes, turning now and then and basting with the leftover marinade, until the juices run clear when the meat is pierced. Transfer pork to a board, carve into very thin slices and pile on a warmed serving plate. Instruct everyone to take a lettuce leaf and place a line of cucumber strips, shredded spring onion and sliced pork down the center. Add a little plum sauce, roll the lettuce leaf up into a parcel and eat! |
