5 dozen fresh mussels, whole (2 pounds), scrubbed
1/2 cup dry white wine
1/4 cup olive oil
2 whole shallots, finely chopped
5 whole garlic cloves, finely chopped
1 1/2 cans plum tomato, whole, broken up
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 whole bay leaf
1/2 teaspoon crushed red pepper
salt and pepper, to taste

1. Scrub mussels well under cold running water; remove beards. Discard any mussels that are open.

2. Heat olive oil in a large saute pan or Dutch oven over medium-high heat. Add shallots (1 small onion may be substituted); saute until softened, about 5 minutes.

3. Add garlic and saute an additional minute.

4. Add tomatoes, wine and seasonings (additional hot pepper may be added to taste); cook until slightly reduced, about 10 minutes.

5. Place cleaned mussels in a large pot with 1/2 cup water. Cover and cook over high heat for 4-5 minutes, or until mussels are open. Remove mussels from the pot, discarding any that have not opened. Reserve the cooking liquid.

6. Add the mussels to marinara fra diavlo and stir well to mix with the sauce. Add reserved mussel liquid to flavor and thin sauce, if desired.
