2 fresh lemons
1 c. dry white wine
1/4 cup plus 2 tbls. extra virgin olive oil
5 tbls. minced fresh herbs: sage thyme, rosemary etc,
3 cloves garlic, minced
3-4 lbs. free range serving chicken pieces
salt and freshly ground pepper to taste

Grate the zest of the lemons into a large bowl then squeeze the lemons into the bowl.Whisk in the wine, 1/4 cup of the olive oil, the herbs and the garlic. Add the chicken pieces and toss to coat completely. Marinate covered in the refrigerator for several hours.

When ready to cook, preheat oven to 350ºF.
Heat remaining 2 tbls. of olive oil in a large frying pan. Drain the chicken pieces, reserving the marinade. Fry over medium heat until crisp on all sides, about 5-7 minutes per side.Place chicken pieces in an oven dish, large enough to hold all of the chicken in one layer. Pour the reaming marinade into the frying pan and brig to a boil, scraping up any brown bits/ Pour marinade over the chicken and bake uncovered for 25-30 minutes, or until juices run clear when pierced with a fork. Add salt and pepper to taste.

Serve in the dish in which the chicken was baked, or remove to a heated platter and pour pan juices over.
