Ingredients:  
1 small eggplant diced and sauted in oil with garlic
Add three lbs of ground meat (for peppers) OR
1 1/2 lb. ground meat and 1 1/2 lb. sausage( for turkey)
12 slices bread (crumbled in food processor)
3 hard boiled eggs mashed
1 small mozzarella grated
grated Romano cheese to taste
3 eggs beaten

Directions:
Directions:
Saute eggplant,add meat,add all other ingredients and cook together for a few minutes mixing well.
Stuff turkey or peppers.
Peppers: Place in a 350 oven on their side ,turning until they are completely browned.Add 1 lg. can Hunts tomato sauce and cook about 1/2 hour until tender.
Turkey: I cook left over stuffing in a casserole.
