3 lb. ricotta(cream it)
5 eggs (beaten)
1 c + 2 tbsp. sugar
1 1/2 tsp lemon rind
1 1/2 tsp. vanilla
1/2 pint of heavy cream

Directions:
Directions:
Cream ricotta, add beaten eggs,sugar, lemon rind, and vanilla. Beat until creamy. In a stream add the heavy cream beating until it is a whipped cream texture. Pour into a 9x11x2 inch pyrex dish.
Bake for 1 1/4 hours at 350 .Turn off oven and leave it in for 20 mins.

For years I had a problem with the crust.Then I wised up and eliminated it .Great move.
