Ingredients:

2 lb flour (8 cups)
1 yeast cake dissolved
1 egg
4 potatoes cooked and mashed (or 3 cups instant mashed potatoes prepared per box to yield 8 servings)
1 tsp salt
2 tsp rosemary chopped and soaked in 2 cups warm water - strain out rosemary before using water in dough
Canola oil for frying

anchovies (optional)

Directions:
Directions:
Mix all ingredients except anchovies in mixer, then knead well with hands OR mix and knead in food processor
Let rise 1 hour (no longer or dough will flatten)
Dough will be sticky and recoils easily
Form into strip (oiling your hands slightly makes working with the dough easier)
Stretch dough with forks in hot oil
Fry until lightly browned

May put anchovy into dough as it is stretched before frying

Grandmom Josephine DiGregorio's recipe.

Grandmom and Grandpop, as well as Mom and Dad, worked the dough together. One would stretch the dough while the other would hold one end then the other with forks in the oil so the dough stayed stretch out. You can imagine the fights that ensued as they worked!! I think it must have added to the wonderful taste and certainly to the tradition. Serve with sugar for dipping.
