Ingredients:  
1 quart water
1 pound string beans
1/3 cup red onion, thinly sliced
2 cloves garlic, thinly sliced
1/2 whole fresh lemon juice
1/2 cup extra virgin olive oil
2 medium tomato, seeded and diced
sea salt, to taste
freshly ground black pepper, to taste
3 mint leaves, torn

Directions:
Directions:
1. Snap off end of string beans and pull stings way or trim tips.
2. Bring 1 quart of salted water to a boil and add string beans.
3. Blanch for 2-4 minutes after water returns to a boil until tender but still a little crisp.
4. Shock beans under cold running water or in ice water bath for 1 minute, drain.
5. Add red onion, garlic, tomatoes, salt, pepper and mint.
6. Drizzle with lemon juice and olive oil.
7. Stir to coat well
8. Serve at room teperature.
