2 1/2 lb. potatoes
1 c. flour
1 egg and 1 egg yolk

Directions:
Directions:
Dice and boil potatoes and let cool.
Rice potatoes (use a ricer).
Combine all ingredients and gently kneed.
Roll out into strips and cut into desired size.
Roll with a fork.
Immediately boil in salted water.
Serve with choice of sauce.
