16-20 Ea Large sea Scallops
1/2 Cup Lemon puree (see recipe)
2 Lemons, segmented
1 Tbsp Capers
1 Tbsp Aged balsamic Vinager
1/4 Cup Parsley Leaves

Directions:
Directions:
Sear scallops till golden on one side. Flip over & remove fat from pan.
Add butter to pan & begin to brown.
Add capers, lemon & parsley to pan, pull off heat.
Plate with lemon puree.
Spoon cooking juices over top & garnish with a few drops of vinegar
