3 zucchinis halved and chopped
1 14 oz can of diced tomatoes
1-2 T of olive oil
1 med onion halved and sliced
2 cloves of garlic chopped
salt and pepper to taste
1 or 2 fresh basil leaves
chopped parsley

Directions:
Directions:
In a med sauce pan heat olive oil on med heat
add onions for a minute or two then add garlic for another minute until clear

Add a can of diced tomatoes and the rest of the spices until it boils

Add Zucchini, cover and simmer for about 25-30 minutes.

Remove cover and cook to desired thickness usually 10 more minutes.
