2 beef tenderloin filets, equal in size
Olive oil
¼ cup green onion, chopped
1 oz. brandy
¼ pint of heavy whipping cream
2 Tbs. stone ground mustard
1 lg clove of garlic, minced
Salt and pepper

Directions:
Directions:
In a large, heavy skillet, pan-fry the filets in olive oil. Sear quickly on both sides to seal in the juices and then cook until done to your satisfaction, 10-15 minutes. Remove beef from the pan to a warmed (serving) platter. Add onion to skillet and cook until it begins to soften, about 5 minutes. Add brandy, cream, mustard, garlic, salt and pepper. Cook on high until sauce becomes bubbly and thick. You may either add the meat back to the sauce and serve in the pan (this will warm the meat), or just pour the sauce over the tenderloin and serve! This is a beef-lovers delight!
