1 cup luke water
1 1/2 teaspoon yeast
1 tablespoon sugar or honey
1 1/2 teaspoon salt
2 1/2-3 cups flour
Olive oil
FILLING
t tablespoon olive oil
1 cup onion, minced
1 lb spinach, stemmed and minced
1/2 teaspoon salt
Black pepper
4-5 cloves garlic, minced
1 tablespoon dried basil
1 lb. ricotta or cottage cheese
2 cups (packed) mozzarella, grated
1/4 cup Parmesan, grated

Directions:
Directions:
In a medium bowl, add yeast and sugar to water and stir. Stir in salt and flour with a whisk. Use a floured hand when it becomes too thick. Knead in the bowl for 5 minutes. Coat dough with olive oil, cover the bowl, and let rise until doubled, about 1 hour. Sauté onions in olive oil until translucent, about 5 minutes. Add spinach, salt, and pepper. Cook until spinach wilts. Stir in garlic and basil and cook 2 minutes. Drain completely. Add cheeses. Mix well and correct seasonings. Preheat oven to 450o and oil a baking tray. Punch down dough and divide into 6 section. On floured
surface, roll into circles 1/4 inch thick. Place 1/2-3/4 cup filling on one half of circle, leaving a 1/2 inch rim. Moisten rim with water, fold, and crimp edge with a fork. Poke holes on top surface and arrange on oiled tray. Bake 15-20 minutes or until crisp and lightly browned.
