2 lb. chestnuts 2 c. beef broth
1/4 c. dry red wine 1 onion thickly slices
1 tbsp bitter 1 tsp salt
1/8 tsp white pepper 1/2 c.heavy cream

Directions:
Directions:
1. Make 1 inch slit on flat side of chestnuts. Place batches of 9 chestnuts in glass pie pan and microwave on high of 4 minutes. Peel and repeat.
2. Combine chestnuts with broth, wine and onions in sauce pan and cook 20 minutes over low heat until tender. Drain.
3. Puree chestnuts with onions and small amount of broth. Mix with butter, cream, salt and pepper.
Heat before serving.
