1/4 c. soft butter or margarine
1 c. sugar
2 eggs separated
1/2 c. milk

1 1/2 c. flour
2 tsp. baking powder

cinnamon sugar (1/4 to 1/2 c. sugar mixed with 1-2 Tbsp cinnamon)
1/4 c. butter or margarine

Preheat oven to 350 degrees
Cream butter and sugar.
Add well beaten egg yolks.
Combine flour and baking powder.
Alternate adding milk and flour mixture until well blended. Batter will be heavy.
Whip egg whites until stiff.
Carefully add egg whites to cake mixture using a large spatula or spoon. Do not blend completely. Air pockets will form in the batter and the cinnamon mixture will fill in those pockets.
Pour batter into a greased (Pam or Mazola works well) and floured 8 x 8 cake pan.
Melt 1/4c butter and spread over the top of the batter.
Sprinkle cinnamon sugar over the butter. You can add more butter or sugar without harming quality of the cake. Yum, yum!

Bake for 30 minutes.
Cake is done when a toothpick inserted in the middle comes out clean.

This recipe can be doubled for an 9 x 13 pan. Change time to 45-50 minutes.
