2 c. sugar, 1 1/2 c. wesson oil, 2 c. sifted flour, 1 tsp. salt, 1/2 c. coconut, 4 eggs, 3 fresh grated carrots, 2 tsp. soda, 2 tsp. cinnamon, 3/4 c. pecans
FROSTING:1 - 8 oz. pkg cream cheese, 1/4 c. butter, and enough powdered sugar to make a spreadable frosting

mix ingredients in order, bake at 375 in a 10x 15 pan. 35- 40 min. Let cake cool and then make your frosting. This recipe should be enough for 2 cakes.

My husband and I love carrot cake. Haugen daus came out with a ice cream called carrot cake passion. We couldn't get enough of that stuff, then the store quit stocking it, we drove to every store in the Fargo Moorhead area looking for that ice cream. We were on a mission. Needless to say they don't make it anymore, but if you ever come across that ice cream try it and enjoy.
