1 c. GF flour blend
2 c. tapioca flour
½ t. Salt
2 t. baking powder
1/2 t. baking soda
1 t. xanthan gum
1 t. guar gum (or xanthan gum)
2 T. buttermilk powder
5 T. lard or shortening
1/2 c. milk

Directions:
Directions:
Combine dry ingredients. Cut in shortening. Slowly add in the milk until forms a ball, may need more or less milk depending. Kneed by hand just a bit. Form balls and cover with moist towel. Let rest 1 hour.

Heat griddle to 375 degrees. Roll out each ball, keeping unused balls covered so they do not dry out. Cook about 30 secs each side. They will bubble some.

Either eat that day or freeze.
