1 lb. lean ground beef
2/3 c. chopped onion (1 small)
1 clove garlic, minced
1-10 oz. can cream of mushroom, celery or corn soup
1-4.5 oz. can chopped green chiles (more if desired)
1-10 oz. can enchilada sauce
10- 6" corn tortillas
3 c. Monterey Jack cheese
paprika to taste
cilantro, optional

In a large skillet, cook ground beef, onions and garlic over medium heat until meat is browned. Drain, then stir in soup and chiles. Spray a 3-4 qt. slow cooker with non-stick cooking spray. Spread 1/4 c. enchilada sauce on bottom then layer 4 corn tortillas, overlapping in an even layer. Top with 1/3 of beef mixture, more enchilada sauce then cheese. Cook on low for 41/2 - 51/2 hours. Let stand 10 minutes before serving.
