2 c. mixed beans
2 qts. water
1 ham hock
1/4 tsp. pepper
16 oz. can whole tomatoes, chopped (not drained)
1/4 c. lemon juice
1 lg. onion, chopped
1 clove garlic, minced
1 roasted green chili, chopped
1 1/4 tsp salt (added after beans have cooked)

Sort and wash beans. Place in large stock pot and cover with 2" water above beans. Soak overnight. Drain and rinse. To beans, add 2 qts. water, ham hock, and pepper. Cover and bring to boil. Once it boils, simmer 2 hours till beans are tender. Add remaining ingredients. Simmer 30 minutes. Remove ham hock from soup and remove meat from bone. Chop meat and return to soup. Simmer another 10 minutes.
