2 med Eggplants
2 T parsley flakes
1 C water
1/2 C tomato paste
2 well beaten eggs
1/2 C grated parmesan
1/4 lb butter
1/2 C olive oil
1 lb ground hamburger
1/2 C bread crumbs
2 med onions - chopped
salt, pepper, oregano, basil & garlic to taste

Cream Sauce:
2 T butter - melted
2 T flour
2 C milk
2 eggs
salt & pepper to taste

Directions:
Brown meat & onions in oil. Add water, tomato paste, parsley, butter, salt & pepper. Simmer till paste is thickened. Add 2 T bread crumbs to hamburger mixture. Peal & slice eggplant in 1/4" pieces. Using another pan, sprinkle eggplant slices with flour and saute lightly in oil. Butter a baking dish (9X13) and sprinkle with 2 T bread crumbs. Alternate layers of meat mixture and eggplant. Mix all ingredients for cream sauce together. Pour cream sauce on top of eggplant and meat mixture and spread evenly. Sprinkle with parmesan and remaining bread crumbs. Bake in 350 oven for 1/2 hour or until bubbling.
