(Mackerel or bluefish also work beautifully in this recipe.)

1 Salmon cutlet per person
White wine
Olive oil
Salt & pepper
Herbs: dill, parsley, garlic, rosemary, thyme

Directions:
Directions:
1. Wash, wipe down cutlet with paper towel
2. Heat a frying pan with coating of olive oil (hot). Add salmon and seal on both sides (1-2 min per side).
3. Transfer salmon to a piece of foil (enough to wrap fish in a packet). Add 1 T white wine, salt, pepper and herbs. Wrap in foil (each cutlet has own packet).
4. Bake in a moderate oven for about 30 min (330*)

Serving suggestions: with new potatoes and salad, brown bread, tomato and onion salad, brown rice and/or steamed vegetables.
