11/2 lbs. lean pork shoulder
cut in 21/2 ” strips
1 20 oz. can pineapple chunks
1/4 c brown sugar
2 Tbsp corn starch
1/4 c vinegar
2 Tbsp soy sauce
1/2 tsp. salt
3/4 c green peppers
1/4 c sliced onions
Chow Mein noodles

Brown pork slowly in hot oil. Add 1-cup water, cover and simmer till tender (2 hours). Keep checking water. Drain pineapple, reserving syrup. Combine brown sugar and cornstarch; and pineapple syrup, soy sauce, vinegar, and salt. Cook and stir over low heat till thick. Pour over hot cooked pork. Let stand 10 minutes. Add pineapple, green pepper and onion. Cook 15–20 minutes on medium heat till softened. May serve over noodles. (Chicken or beef may be used instead of pork.)
