1 large eggplant
olive oil
Anellette pasta or other short pasta
Homemade tomato sauce
Grated Parmesan cheese
Mozzarella cheese sliced
Ricotta

Directions:
Directions:
Slice and fry eggplant in oil. (Not to thick or thin).
Drain on paper towels and set aside.
Cook Anellette. In a pyrex or corningware baking dish, layer sauce, pasta, cheeses, eggplant sauce and repeat. Top with Mozzarella. Bake 350º until cheese melts.
