3 cups of zucchini, quartered and finely chopped
1 cup Bisquik baking mix
1/2 cup grated parmesan cheese
1/2 cup finely chopped onion
2 tbsp parsley, chopped
1/2 tsp salt
Pepper
1 clove of garlic, shopped fine
1/2 cup vegetable oil
4 eggs, slightly beaten

Directions:

Heat oven to 350º. Grease 13 x 9 pan.
Mix all ingredients, and speread in pan. Bake until set and golden brown, 25 to 30 min.
Let stand 10 min., and cut into squares.
