Ingredients: Dough: 1 tsp. active dry yeast 1 1/2 c hot water 4 c flour 1 tsp salt 1/4 c shortening
Meat Filling: 1 1/2 lbs meat (beef or pork) Water 1 c raisins 1 c applesauce 3/4 c sugar 1/2 c dark corn syrup 2 tsp cloves 1 tsp cinnamon 1 tsp salt 4 c Piņon nuts or any kind of nuts (optional) 1/4 c sherry wine

Directions:Dissolve yeast in water in a small mixing bowl. Combine flour and salt in a large mixing bowl and cut in shortening. Make a well in the center of dry ingredients. Add liquid to dry ingredients and work into dough. Knead dough until it is smooth and satiny.
Place meat in a medium sized saucepan and cover with water. Cook until tender. Grind meat after it has cooled. Place ground meat in a large mixing bowl and add all remaining ingredients. Mix well.
Roll dough about 3 inches in diameter, approximately 1/4" thick on a lightly floured board. Place a spoonful of filling off-center on each pastry circle. Fold pastry in half over filling and pinch edges together to seal. Heat 2 inches of shortening in a heavy pan at medium-high heat. Fry empanaditas until golden on both sides, turning once. Drain on absorbent towels. Sprinkle empanaditas with powdered sugar, if desired. |
